Tender, seasoned steaks are even a lot of sapid finished with a melty chipotle-garlic butter that adds a touch of smoke.
2 tbsp butter, softened
2 tsp minced canned jalapeno peppers in dish sauce
2 tsp minced recent cilantro
1 clove garlic, minced
1/2 tsp smoke-dried paprika
4 (1″ thick) bone-in beef strip steaks, about 1 lb. each
2 tbsp vegetable oil
2 tbsp dry urban centre cut of meat seasoning
Heat grill to medium-high. Grate 1/2 tsp. zest and squeeze one tsp. juice from lime into a bowl; stir in butter, jalapeno peppers, cilantro, garlic, and smoke-dried paprika till mixed. Reserve.
Coat steaks with oil, then sprinkle with a cut of meat seasoning. Grill, flipping once, till medium-rare, 4–5 min. per side. Transfer to serving platter; brush hot steaks with butter. Let rest 3–5 min. before serving.
